2cupscrushed butter crackers*about 55 crackers- see notes
1tspseason salt
1/2tspgarlic salt
1/4tspblack pepper
1/2cupbutter, cut into small pieces*one cube/stick
Instructions
Preheat the oven to 375°F. Line a baking sheet with parchment paper or spray a baking sheet with cooking spray.
Make sure your chicken is trimmed and pretty even in thickness. Make sure they’re not too thick. They should be about 1/4 inch or a bit thicker. Fillet the chicken into thinner pieces or pound it out to even thickness. I prefer to make smaller pieces of chicken so cut your chicken breasts into 2 to 3 smaller peices if desired.
Beat your eggs and place them in a shallow container.
Crush your butter/Ritz crackers and place them in a medium sized bowl. Add your seasonings to the Ritz cracker crumbs and mix it well.
Take each piece of chicken and dip it in the eggs. Then, dip it in the crushed butter crackers until it is evenly breaded. Place the breaded chicken breast on the parchment lined baking sheet (or greased baking sheet). Repeat with all of thei chicken. Make sure the chicken pieces are evenly spaced out on the baking sheet.
Top each piece of chicken with small pats of butter.
Bake the chicken for 35-40 minutes or until the center of the thickest piece of chicken reaches 165°F.
Serve your chicken with mashed potatoes and gravy (gravy is tasty on the chicken too), a salad or a veggie and some bread!
Notes
This recipe will leave you with anywhere from 8-12 pieces of chicken if you cut the chicken breasts into smaller pieces. You can choose to just bake 4 larger pieces and not cut the chicken breasts into smaller pieces.You can use any type of butter crackers for this recipe. I prefer Ritz Crackers. If you use Ritz Crackers for this recipe there’s few different types of boxes you can buy, and each box of crackers has a different amount of crackers in each sleeve. If you buy the regular box of Ritz crackers, each sleeve usually has about 32 crackers in it. I just use 2 sleeves (I eat a few) and crush them up. You need about 2 cups of crushed butter crackers so that is about 55 cracker give or take.You do not have to season the crackers and you can also season to your liking.You can use more than one stick/cube of butter to top the chicken. I use chicken gravy dry mix (the packet kind) for my mashed potatoes and gravy and i like a little on my chicken too!
