This Greek Chicken has the best marinade that that is packed with great flavor. It is the perfect blend of lemon, garlic, oregano and pepper. Serve this with Yellow Rice and you have the perfect meal! This chicken marinade recipe will marinade up to 3 pounds of chicken. I cut up my chicken breasts into smaller pieces, and usually get about 10-12 pieces of chicken out of 3 lbs.

7-8mediumlemons, squeezed*approx. 1 1/2 cups of lemon juice - see notes

8tspminced garlic
4tspsalt
4 1/2tspground oregano
1tspblack pepper
Instructions
In a bowl squeeze all of your lemons. Add the oil and other seasonings to the lemon juice. Mix well.
Add your cut up chicken pieces to a zip top bag, or large bowl with a tight lid (it needs a lid to be covered for marinating or your entire fridge will smell). Add your marinade to the chicken and mix well making sure the chicken is completely covered. Let your chicken marinate in the fridge for at least 6 hours, or overnight.
When you are ready to grill your chicken, heat your grill on medium heat. Take your chicken out of the marinade and place it on the grill. (Discard any leftover marinade.) Grill your chicken for 6-8 minutes per side or until the internal temperature reaches 165 degrees.*See blog post above for instructions on coking the chicken on the stove or in the oven.

Notes
I use 3 lbs. of chicken breasts and cut them up into medium sized pieces. You can marinade the entire breast and grill it without cutting it into pieces but the flavor won't be as good on larger pieces. The smaller/sized pieces are perfectly marinaded and the perfect portion for people.You can use bottled lemon juice. You will need about 1 1/2 cups. Add more lemon juice if you want a stronger lemon flavor.You can bake the chicken pieces in the oven at 400 degrees for about 20 minutes or until the internal temperature reaches 165 degrees.You can cook these chicken breast pieces on your stove top in a skillet with some additional olive oil or canola on medium heat until they are browned on both sides and the internal temperature reaches 165 degrees.We eat our Greek Chicken with Lemon Yellow Rice and Fresh Tzatziki Sauce and Naan or Pita pocket bread!
