This Fresh Tzatziki Cucumber Sauce is made with fresh cucumbers, garlic and dill and is the perfect addition to any Greek meal. Try it with my Greek Chicken and Yellow Lemon RiceMakes about 2 cups
1 1/2cupsplain yogurt or Plain Greek YogurtI prefer Plain Yogurt
1cucumber*or more if you want a strong cucumber flavor
2tsplemon juice, fresh squeezedor more to taste
1 tspminced garlic*bottled minced, if using fresh minced use 1/2 tsp
1/2tspolive oil
1/4tspdried dill weed
salt and pepper to taste
Instructions
Peel your cucumber (optional- keep the peel on if you like it), then cut it in half lengthwise and try and remove most of the seeds. Grate or finely mince the cucumber so it is finely shredded/minced. Put the grated or minced cucumbers in a bowl and press most of the juice out, keep the cucumber juice to add to the sauce.
In another bowl, add your yogurt and grated/minced cucumber. (Make sure most of the juice is pressed out of them before adding them to the yogurt).
Add your other ingredients and mix it all together. Slowly add in the cucumber juice to your liking. Adjust the seasonings to your liking.*You can also add some extra cucumber juice to the top of the bowl and some extra dried dill weed to make it look fancy for serving (see blog post above for photo of this).
Store any leftovers in the fridge for up to 3 days.
Notes
This cucumber sauce can be stored in the fridge for up to 4 days.We love to eat the Tzatziki Sauce with my Greek Chicken and my Yellow Lemon Rice.
