3lbs.pork chops *about 8 pork chops- you can use bone in or boneless
1 1/2lb.potatoes, peeled (optional) and cut into 1 inch peices *I prefer Russett or Yukon Gold
1/2lb.carrots, peeled and sliced/diced
1/4 to 1/2lb.fresh green beans, trimmed*use 1/4 to 1/2 lb depending on how many you want NOTE: you will add these in the last few hours of cooking time
Gravy Sauce
1large can (22.6 oz)cream of mushroom soup
1large can (22.6 oz)cream of chicken soup
1cupwater
3tbspRanch Seasoning Dry Mix, or 1- 1 oz. packet
2tspWorcestershire Sauce*optional
salt and pepper to taste*I usually only add pepper as the ranch seasoning has plenty of salt- but add according to your taste
Instructions
Spray your 5 or 6 quart slow cooker with cooking spray.
Mix the gravy/sauce ingredients together in a large bowl. Add your cut potatoes and carrots to the sauce and mix well.
Pour 1/3 of your sauce and veggies on the bottom of the slow cooker.
Add 3-4 pork chops (however many fit easily without much overlap) on top of the sauce and veggies.
Pour more sauce and veggies over the pork chops. Leave enough sauce to add to the very top at the end.
Place the remaining pork chops on top of the sauce and veggies.
Pour the last of your sauce and veggies on top of the pork chops.
Cook on low for 8 hours or on high for 4 hours. Or cook according to your slow cooker.
Add the fresh green beans the last 3 hours of cooking time on low, or the last hour if cooking on high.
Notes
I use a 6 quart slow cooker but a 5 quart works great but is probably the smallest you can go. You can half this recipe if you don't have a 5 or 6 quart slow cooker. A larger slow cooker will work great too!I add in the green beans the last few hours of cooking time. I rinse and trim them before adding them in. You could use canned green beans. Drain them first and they will only need an hour cook time on low and about 30 minutes on high.If you are adding veggies that cook faster than potatoes and carrots, add them in the last few hours of cooking time. You can adjust the seasonings to your taste as needed. You can also use low sodium canned soups if you are concerned about sodium intake.
