Cilantro Lime Rice is a perfect rice to compliment all of your Mexican dishes. It is soft and fluffy and full of flavors from fresh lime juice and fresh chopped cilantro!
1tspminced garlic (bottled) or 2 fresh garlic cloves minced*I use the bottled minced garlic-so much easier
3tbspcilantro, chopped fine
1 1/2tbsplime juice, fresh squeezed*or more to taste
2tspwhite sugar
1tspcumin *add after the rice has cooked*or more to taste
salt to taste
Instructions
In a medium sized saucepan, add the water, chicken broth, butter and minced garlic and bring to a boil.
Add the rice, give it a stir and cover. Reduce heat and let simmer on low for about 30 minutes or until the rice is fully cooked.
While the rice is cooking, in a small bowl mix the lime juice, sugar, and chopped cilantro together.
After the rice is done cooking, add the lime-cilantro mixture to the cooked rice and add the cumin. Mix well, fluffing the rice as you stir. Adjust the lime juice as needed and salt to taste!* you can adjust the cumin, salt, lime juice and cilantro to taste.
