Instructions
Make sure your chicken is pounded out to an even thickness for cooking. I cut my chicken breasts into smaller pieces and make sure they are fairly even in thickness throughout each piece. I get about 6 pieces out of 1 1/2 pounds of chicken (this will vary depending on how big or small your pieces of chicken are).
Mix your 3 sauces in a small dish or a large measuring cup. You can make more sauce/marinade if you are using more chicken or if you feel like you need more sauce for marinating. Just add equal parts of each sauce. Adjust the sauces to your liking, adding more or less of any of them.
Place your chicken in a zip top bag. Pour the sauce over the chicken, and seal the bag (letting out as much air as you can). Squish the chicken around to get the sauce evenly spread on all of the chicken. Place your zip top bag of chicken in a dish or on a plate in case it leaks.
Place the chicken in your fridge and let it marinate 6 hours or even overnight.
When the chicken is done marinating, you can cook it one of the following ways:
Grilling The Chicken
Heat your grill on medium heat. Grill your chicken for about 20 minutes, flipping it half way through cooking. It is done once the internal temperature of the chicken reaches 165 degrees.
Smoking The Chicken
Heat your smoker to 400 degrees. Place the chicken on your smoker and let it smoke for about 20 minutes, flipping it half way through cooking. It is done once the internal temperature of the chicken reaches 165 degrees.
Oven Baked Chicken
Heat your oven to 400 degrees. Line a baking sheet with parchment paper or grease the pan. Place the chicken on your baking sheet and let it cook for about 20 minutes, flipping it half way through cooking. It is done once the internal temperature of the chicken reaches 165 degrees.
Stove-Top Chicken
In a large skillet over medium heat, add about 1 tablespoon of oil. Cook your chicken on each side for 8-10 minutes or until the internal temperature of the chicken reaches 165 degrees. If the chicken is cooking too fast, lower the heat.
Serving Sweet Baby Ray's Chicken
Once your chicken is cooked, it is time to eat! I love to make extra sauce for dipping but this is optional.Serve your chicken with garlic bread, steamed veggies, corn on the cob, a side salad or a loaded baked potato.
Notes
You can use any type of chicken if you don't like boneless, skinless chicken breasts. This easy chicken is great even if you don't have time to marinate the the chicken. Just slather on the sauce and cook it.You can baste your chicken at the end of cooking with extra sauce.I always make more sauce for dipping. I make it separate from the marinating sauce and any basting sauce. NEVER REUSE THE LEFTOVER MARINATING SAUCE FOR DIPPING OR OTHER THINGS! THROW IT AWAY!This chicken is amazing in salads, sandwiches and wraps!
