Dad's Favorite Chili is a classic chili recipe that is loaded with flavor! It is full of ground beef, pinto and kidney beans, some fresh veggies and classic chili seasonings.
1(29 oz) canpinto beans, with liquid*2 - 16 oz. cans work too
1(29 oz) cankidney beans, with liquid*2 - 16 oz. cans work too
2cups water
3largetomatoes, diced
2Anaheim Chilis, seeds removed and diced
1mediumyellow onion, diced
1stalkcelery, diced*not a bunch-just 1 stalk
3tbspchili powder*more to taste
2 tspcumin*more to taste
2tspsalt*more to taste
1 1/2tspblack pepper*more to taste
1tsppaprika
Instructions
Brown your ground beef and drain it. Chop your tomatoes, celery, onion and Anaheim Chili.
Add all of the ingredients to a large pot and let it simmer over medium-low heat for 2-3 hours.**Do not drain your beans, add the liquid!
Adjust the seasonings to your taste.
Serve your chili with shredded cheese, sour cream, chopped green onions, tortilla chips or your favorite chili fixings!
Notes
Dad's Favorite Chili can be heated in a slow cooker for 2 hours on high or 4 hours on low. The ground beef is already cooked so the fresh veggies just need cooked and the chili heated through. This chili can be kept in your fridge for up to 3 days and reheated on your stove top. It can also be frozen for up to 6 months for the perfect freezer meal!
