This fruit dip is sweet and creamy. The Pina Colada coconut flavor is fresh with a hint of pineapple. The perfect fruit dip or dip for cookies or graham crackers!This recipe makes about 4 cups of fruit dip.
3/4 cupCream of Coconutnot Coconut Cream or coconut milk
1/2cuppineapple juiceusually in a can - do not use a pineapple juice blend
1/2tspvanilla extract
Instructions
In a bowl, mix tougher the cream cheese, pineapple juice, cream of coconut and vanilla extract. **I start out mixing it with a fork or spoon to break up the cream cheese and then use a had mixer to get it mixed fully and smooth with no lumps.
Gently fold in the cool whip until fully incorporated.
Serve with fresh fruit, cookies or sweet crackers.
This can be stored in your fridge for up to 5 days.
Notes
Make sure you get Cream of Coconut (by the drink mixers) not Coconut Cream or coconut milk. (that is too runny). See the blog post above.
